1. Drink lots of water! – Dehydration leaves your skin looking dull, dry and listless as the body “steals” water from the skin to help maintain other essential body processes. Aim for two litres of water a day.

VEILS ARE WORN AS ACCESSORIES FOR A WIDE VARIETY OF REASONS. PERHAPS YOU’RE FOLLOWING TRADITION, OR STICKING TO YOUR CULTURAL BELIEFS, OR PERHAPS YOU’RE JUST LOOKING FOR THE “CHERRY ON TOP” THAT TAKES A GORGEOUS WHITE GOWN AND TURNS YOU INTO A PRINCESS.

Veils have been used over the centuries for various reasons, even shielding a woman’s identity as she rushed to meet her lover.

Brides once used to wear their hair flowing down their back at their wedding to symbolise their virginity and bridal beauty … oh, how things have evolved … or have they?

In the 19th century, wedding veils came to symbolise not only the woman’s virginity, but also her modesty. After the full conclusion of the wedding ceremony, often the bride’s father would lift the veil, thus giving the bride to the groom who would then kiss his new wife. Sometimes the new groom would lift the face veil in order to kiss his new bride, symbolising his taking of her and his right to enter into conjugal relations with her. In these instances, the lifting of the veil was a ritualistic act.

In the dance of the seven veils, the veil was used for mystery and to hint at sensuality, framing the body and accentuating movements. Did you know that in some parts of West Africa men wear veils, albeit for protection from the heat and sands. In countries such as India, Pakistan and Bangladesh the man’s veil, referred to as a Sehra and typically made of flowers or beads, is worn on his wedding day.

In Roman times brides were thought to have worn an intensely flame-coloured and fulsome veil, called the flammeum, apparently intended to protect her from evil spirits on her wedding day. Just imagine if that was still standard practice with today’s colour coordinating and styling!

Modern brides choose more elaborate hair styles for their big day with the hair itself becoming an accessory, created to be on display. Yet quite often this is hidden for the majority of the wedding day proceedings by the veil.

Brides today have the option of many veil styles, from Angel-cut and birdcage to mantillas and bandeaus. The styles and lengths are endless and can be selected to suit your dress, your personality and any cultural or religious beliefs you may follow.

So, the question remains … to veil or not to veil?

Your wedding cake will be a focal point at your reception, and the cutting of your cake will be the first task you will undertake as a newly married couple. Traditionally, it is the bridesmaids who serve the cake to all the guests, ensuring that everyone can wish the bridal couple good health by eating a piece of the wedding cake.

You may have dreamed of a spectacular showpiece towering high towards the ceiling with many tiers, or perhaps a simple cake that blends into the overall decorations at your venue. Each couple has their own ideas of what is perfect for them.

For many couples, the size of the wedding cake is a balance of what you need and what you want, and somewhere in between will be your budget!

So how do you decide on the size of your designer wedding cake? On a practical front, the size of your cake should match the number of guests attending your reception, plus any additional tier(s) that you want kept for a future event.

The first decision to make is how you plan to serve your wedding cake. Will it be served with coffee, as an addition to other desserts, or as a plated dessert? How does this relate to your wedding cake? Let’s look at an average three-tiered round cake measuring 15cm, 20cm and 25cm.

Depending on how it is cut, the same cake can be served in different ways: 200 finger serves, 150 small coffee serves, 100 standard coffee or small dessert serves, or 50 full size dessert serves.

Your wedding cake specialist will be able to guide you to the most suitable size for your reception. There are many options available when catering for larger weddings, including having kitchen cutting cakes that are iced but not decorated and that are not displayed. This lowers the cost overall.

The grooms at our consultations often think that these serving suggestions are much too small! Do remember that your wedding cake will be served after a full wedding meal, often including several courses, and your guests will likely be very well fed! Unless you are happy to have cake left over, there is no need to over-cater when it comes to your wedding cake.

For small weddings, a single tiered wedding cake placed on a cake stand is just as beautiful.

You will need:

• 50g Desiccated coconut

• 50g Whole almonds

• 50g Toasted pecan nuts

• 50 g Macadamia nuts

• 3 Egg yolks

• 40g Hazelnuts

• 90g Unsalted butter

• 45ml Cream

• 45g Liquid honey

• 100g Brown sugar

• 100g Dark chocolatebuttons

METHOD

Toast nuts and coconut separately. Cream butter and brown sugar, add eggs one at a time.

Mix in cream and honey. Fold cooled nuts into cream mix. Add chopped chocolate.

Place into blind baked pastry case and cook till set at 170 C

To serve:

Slice into wedges, add a scoop of ice cream, garnish with fresh mint

You will need:

• 600g Hapuka fillet, skinned and boned

• 320g Mashed potato – with 80ml boiled cream and 200g butter added while hot

• 160g Prawn tails – shelled

• 4 Tomatoes

• 1 Clove of garlic – crushed

• A pinch of saffron

• 60ml White wine

• Olive oil

Sauce:

Remove the skin from the tomatoes by placing into boiling water for no more than 8-10 seconds then plunging them into iced water.

Cut the tomato into chunks, about 8 pieces from one tomato. In a pan, pour a little olive oil. When hot, add the garlic and saffron. When starting to colour, add the tomatoes. Cook on high for two minutes.

Add the white wine to add moisture and to wilt the tomatoes. Cook for another two minutes, or until the raw wine taste has gone.

Season to taste. Keep the mash hot. Add the cream and butter and mix in thoroughly. In a hot pan, add a little oil and place the fish into the oil away from you. Do not move the fish at all for at least a minute. This will give the fish a chance to colour up. If the fish is 2cm thick it will take 4-minutes either side to cook.

In the same pan as the fish, add the prawn tails and sauté till cooked. Fold the prawns into the mash and mix over heat.

To serve:

Serve the mash in the centre of the plate. Place the fish on the mash and add the tomato saffron sauce .

For the salsa:

• 1 medium ripe mango – peeled and finely diced

• 1 shallot – peeled and finely chopped

• 1 small red chilli – finely sliced

• 1 tsp coriander leaves – finely chopped

• 1 tsp fish sauce

• 1 tbsp fresh lime juice

• 1 tsp wasabi powder

• Rice paper wrappers

For the rice

• 1 cup uncooked short grain rice

• 1.5 cup water

• 2 tblsp rice vinegar

• 1.5 tsp sugar

• 1 tblsp mirin

• 1 tsp salt

METHOD

Cook the rice with the water, covered, until the water has been absorbed. Then cook on low for 5 more minutes and turn off. Leave for 5 more minutes.

Combine the vinegar and sugar till dissolved. Mix into the rice and set aside.

Soften the rice paper in a little water and cut into 4 strips per sheet.

Wet your hands and mould 2 tablespoons of rice into a small block. Wrap the sides of the block or disc in the rice paper. Continue with all the rice.

To Make the mango salsa, mix all the ingredients together. Top the rice with mango salsa and serve at room temperature

The term flannel most commonly refers to a woolen cloth that is brushed during the later stages of the weaving process to create a “nap” (a raised pile giving a wonderful softness to the touch). The “flannel shirt”, as popularised by lumberjackts and Nirvana, mistakenly refers to shirts made of tartan and plaid fabrics, rather than flannel cloths.

G is for Gingham

Even if you don’t know the name, you know the design. Gingham is a yard-dyed, balanced check available in an almost infinite array of sizes and colours. It was made fashionable in the 60’s by Mods and remains one of the most popular fabric designs for shirts to this day.

J is for Jigger
